The Executive Chef for the fish! Kitchen and fish! Restaurant, London brings you the perfect recipe for Fish & Chips. Ingredients: 4 x 175g haddock portions Batter: 200g flour 250ml lager 1 egg. 1. Mix the beer into the flour and then add the egg. 2. Beat well and add salt to taste. 3. Leave to rest for at least 20 minutes. Tartare Sauce: 200g mayonnaise, 20g capers, 20g gherkins a small bunch of parsley. Chop all ingredients and mix. Mushy peas: Cook 2 x 300g tins of marrow fat peas on a gentle heat with the 25g butter for min 40 mins. Crush with a fork and season. Fish, Chips and Mushy Peas: Flour the fish and dip into the batter. Fry at 180c for 5 mins. Finish the chips in the fryer for 2 mins. Serve with the hot mushy peas and a wedge of lemon, malt vinegar and tartare sauce to serve!
